Westward No More.
So, I’m finally back in the blog-o-sphere after a wonderful vacation to Texas. I have to say that both mon mari and I fell in LOVE with the Lone Star State. The scenery was nothing short of spectacular — oh, the vistas! The night skies are especially pretty in ranch country where you can see forever…
And don’t even get me started on all the delicious Southwestern, Tex-Mex, and authentic Mexican cuisine we sampled during our nearly two weeks on the road! I will say that Texas has, hands-down, the best beef I have ever eaten!
I also must recommend barbacoa or barbacoa de cabeza, if you ever get the chance to try it. It’s not for vegetarians or vegans, but is some of the most delicious meat I have ever had. I had it served with homemade tortillas, chopped fresh cilantro, and queso fresco. Just look it up online, but don’t judge, until you actually taste it.
On our road trip, we ventured all over Texas and much of the American South, but are glad to finally be home where the weather is a little cooler.
